6 hard-boiled eggs
¼ c mayonnaise
1 tsp Dijon mustard
2 tsp vinegar
½ tbls grated onion or shallot
3-4 dashes of Tabasco sauce
Salt & pepper to taste
• Halve hard-boiled eggs lengthwise and remove yolks. Place yolks in
a bowl; mash with a fork.
• Add mayonnaise, mustard, vinegar, onion and Tabasco; mix well.
Season with salt & pepper.
• Fill a gallon size zip-lock bag with the deviled yolk mixture.
Squeeze down to one corner and hold like a pastry bag (use pastry
bag & tip if you have them). Now snip off a small bit of a corner to
squeeze out mixture. Fill each white-half with a swirl of yolk.
• Sprinkle tops of eggs with paprika.
